North Valley Tavern opened with a clear idea of what it wanted to be: a serious craft bar with a kitchen worth staying for. Not a sports bar with a rotating screen, not a dive with a limited well. A place where the taps pour beers you have to seek out — Other Half, WeldWerks, St. Bernardus, Delirium — and the whiskey list rewards people who actually know what they are looking at.
The food follows the same logic. Small plates, wood-fire flatbreads, shareables built for the table. Nothing overcomplicated, nothing phoned in.
